The Abbacchio Romano IGP is obtained from the fresh meat of dairy lambs, both male and female, born and raised in the Lazio region.

Abbacchio Romano IGP consists of light pink and compact muscular masses and has a fine meat texture. This meat is often used in a variety of typical Roman and Lazio dishes, such as the famous Abbacchio alla Romana, which includes the use of the classic ramoracce, a bundle of wild herbs from the Roman countryside.
