Canestrato Pugliese DOP is a hard cheese made with sheep’s milk, produced within the province of Foggia and in various communities in the province of Bari in the region of Puglia.

Presentation

Canestrato Pugliese DOP has a cylindrical shape, with a brown or yellow coloured rind that is wrinkled, hard and thick. The cheese is straw yellow in colour, compact, and crumbly with a pronounced aroma and an intense, salty and spicy taste.

Canestrato Pugliese DOP is used as a table cheese or grated on a variety of dishes, it pairs well with an intense, full-bodied wine such as the local Cacc’e Mmitte di Lucera DOC.
