Une fois cuits, \u00e9gouttez, serrez et \u00e9talez les feuilles de chou pour les faire s\u00e9cher et laisser refroidir sur un torchon.<\/p>\n<p>Pendant ce temps, cr\u00e9ez un m\u00e9lange pour farcir les feuilles de chou en combinant<br \/>\nla viande et la mortadelle, avec l\u2019\u0153uf, le fromage, le sel, le poivre, le persil et le basilic \u00e9minc\u00e9 avec des feuilles de chou r\u00e2p\u00e9es. Laissez le m\u00e9lange reposer avant d\u2019ajouter les feuilles de chou, en les fermant avec un cure-dent.<\/p>\n<p>Dans une casserole, placer l\u2019oignon et la pancetta hach\u00e9s, le beurre, l\u2019ail et la sauge, puis couvrir la po\u00eale et faire sauter jusqu\u2019\u00e0 ce que la graisse de la pancetta ait fondu.<\/p>\n<p>Placer les r\u00f4les de chou dans un conteneur, et saupoudrer de vin blanc, de bouillon et de sel dessous. Cuire \u00e0 feu mod\u00e9r\u00e9 pendant environ 30 minutes.
