Filetto di Fassona alla Torinese


800 gr of beef fillet
250 gr of cracked breadsticks
50 gr of “00” flour
3 eggs
1 bulb of garlic
400 gr of butter
100 gr of Extra virgin Olive Oil
150 gr of breadcrumbs


Cut the fillet into 4 slices of 200 gr. each

Beat the eggs and mix with salt, pepper, sage and 1 clove of garlic.

Cover the meat in the flour, eggs and crushed bread sticks, then repeat and cover the meat in the egg and bread crumbs.

Heat 200 g of butter, 100 g of olive oil, 1 sprig of sage and 4 cloves of garlic in a pan.

Cook the meat for 5 minutes on each side and serve warm
