Tiramisù is one of the most famous Italian desserts and, despite its contested origins, it is definitely a favourite in every region, from North to South. Thanks to its popularity, together with the few and simple ingredients, infinite versions of Tiramisù may be encountered all over the world.  With Savoiardi or Pavesini, with or without eggs, there is only one rule to follow: you must use Mascarpone cheese.

In this article we will provide the recipe of the classic Tiramisù, a must know if you ever wish to impress an Italian, and the recipe of the strawberry Tiramisù, a fresh and more Summer like variant.


Classic Tiramisù


  • 500 gr of Savoiardi
  • 500 gr of Mascarpone
  • 4 fresh eggs
  • 100 gr of sugar
  • 300 gr of freshly brewed coffee, sweetened as you like
  • Unsweetened cocoa powder (for the surface)


  • Start by making coffee, so it has the time to cool down.

For the real star of Tiramisù, the Mascarpone cream:

  • Carefully separate the egg whites from the yolks
  • Add only half of the sugar (50 gr) to the egg yolks and whip with a hand mixer
  • Mix for about 5 minutes and gradually add mascarpone, whipping at a slower pace
  • At this point you should have a thick and compact cream: set it aside for later
  • Carefully wash the hand mixer, so as to eliminate any trace of egg yolks
  • Start mixing the egg whites with the remaining sugar, mix until stiff
  • Now, gradually add the egg whites to the egg yolks and mascarpone, this time mixing with a spatula until you obtain a homogeneous cream. Congratulations, you just made the perfect mascarpone cream!

Time to assemble:

  • One by one dip the Savoiardi in the cooled coffee (just for a few seconds, otherwise they will break) and arrange them at the bottom of a baking dish, so as to cover all the surface
  • Cover the Savoiardi with a well-leveled layer of mascarpone cream
  • Proceed with another layer of Savoiardi covered by a layer of cream
  • At this point you will have two layers of biscuits and two of cream.
  • Let it set in the fridge for at least a couple of hours
  • Before serving, sprinkle the surface with the unsweetened cocoa powder

Strawberry Tiramisù


  • 500 gr of Savoiardi
  • 500 gr of Mascarpone
  • 3 fresh eggs
  • 200 gr of sugar
  • 700 gr of strawberries
  • 300 mlof water


  • Start by cutting 200 gr of strawberries into little pieces, put them in a bowl with 100 gr of sugar and 300 ml of water. Boil for about 10 minutes, mix with a blender and let it cool down. This will substitute the coffee as the liquid for dipping the Savoiardi
  • Prepare the mascarpone cream, as described for the classic version
  • Cut the remaining 500 gr of strawberries into medium pieces.
  • Dip the savoiardi in the strawberry syrup and cover the entire surface of the baking dish. Spread the mascarpone cream all over it, topped with the cut strawberries.
  • Proceed with another layer of soaked savoiardi, mascarpone cream and strawberries.
  • You can decorate with some mint leaves, some berries or leave it as it is.
