Burrata di Andria IGP is a fresh Italian cow or buffalo milk cheese made from mozzarella and cream. The outer shell is solid mozzarella, while the inside contains stracciatella and cream, giving it an unusual, soft texture.

The legend of the Burrata di Andria IGP dates back to the 1930s, when cheesemaker Lorenzo Bianchino created this pasta filata pouch filled with cream and mozzarella rags. The typical closing with the topknot is the distinctive mark of this IGP product, that is produced by a few cheesemakers in Puglia and it’s one of the most particular and fine cheese of the region.
