Spressa delle Giudicarie DOP is a semi-hard cheese produced with raw semi-skimmed cow’s milk from cow breeds native to the Trentino-Alto Adige region.

Spressa delle Giudicarie DOP is produced in the province of Trento, including many communities within the Giudicarie Valleys. The cheese has a cylindrical form, with an irregular, elastic and dark ochre coloured rind. The cheese is semi-cooked, compact and elastic, and it is white or pale straw yellow in colour. The young cheese has a rather sweet flavour, whereas the mature cheese is much more savoury, with a slight hint of bitterness.

To better enjoy the cheese’s taste is it best to eat it when it is it not too marture, and is a great addition to traditional recipes such as polenta and carbonara pasta. The cheese maries best with red wine local wine such as Marzemino DOC from southern Trentino.
