Taleggio DOP

Taleggio DOP is one of Italy’s oldest soft cheeses with origins in the region of Lombardia, where it was first produced in the Taleggio Valley in the province of Bergamo, since the 10th century.

Taleggio DOP is made with whole cow’s milk and has a soft consistency both in its rind and its interior. The scent of this particular cheese is aromatic and quite intense, while its taste is sweet and slightly spicy as it matures.

Taleggio is a table cheese perfect for eating on its own or added to dishes such as the popular Risotto al Taleggio. As for a wine pairing, it marries well with a red, fruity and cool wine, such as Franciacorta Rosso DOCG.
