Burrata di Andria IGP is a fresh Italian cow or buffalo milk cheese made from mozzarella and cream. The outer shell is solid mozzarella, while the inside contains stracciatella and cream, giving it an unusual, soft texture.
Burrata di Andria IGP is a typical product of the Puglia region in Italy’s southeast. The word burrata, means “buttered” in Italian, which is in reference to its its creaming and spongy filling.
The cheese is usually served fresh and has a rich, buttery flavour which goes well with salad, prosciutto crudo, bread, fresh tomatoes or pasta. Burrata is a highly regarded Italian cheese product and is renowned around the world.
The legend of the Burrata di Andria IGP dates back to the 1930s, when cheesemaker Lorenzo Bianchino created this pasta filata pouch filled with cream and mozzarella rags. The typical closing with the topknot is the distinctive mark of this IGP product, that is produced by a few cheesemakers in Puglia and it’s one of the most particular and fine cheese of the region.
Burrata di Andria IGP’s artisanal method of production is concentrated in an area with a strong passion for agricultural and rural traditions and makes the Burrata di Andria IGP an iconic symbol of the Puglia region, representing the values, the history and the culture of its inhabitants.
