We will leave in the morning from Milan by your own vehicle or by a rental minivan (if you wish we can provide even a private minivan with driver). Direction: Oltre Po’ Pavese. First stop, visit to a well renowned wine farm. You will visit the cellar of the farm and tasting 4 wines: two sparkling wines and two reserve reds with a platter of accompanying appetizers. It’s not far from Milan, in twenty minutes from the motorway, exit at Broni- Casteggio direction Pavia. The farm was born in 1873 with Alessio’s great-grandfather, Carlo. The grape varieties grown here are Barbera, Croatina, Uva Rara, Pinot Noir for red vinification, Malvasia, Riesling, Chardonnay, Pinot Noir for white vinification.

After visiting the winery, you will have a reservation at a very renowned and typical Locanda – Prato Gaio, where you will try typical local food with the explanation of the Locanda’s owner.

After lunch we will continue to Varzi to discover the best salame in the world. We chose a local and typical salami producer which is one of the several locations where you can taste and understand the goodness of their salame. The denomination “Salame di Varzi” goes to the salami whose production phases, from the choice of meat to the final seasoning, takes place in the production area geographically identified between the borders of 15 municipalities near Varzi, all of which are part of the Mountain Community Oltrepò Pavese. Salame di Varzi – filzetta, filzettone, gentile or double casing stitched – prepared with the use of strictly pork casing has a maturation time ranging from a minimum of 30 days for the scalettino, to a minimum of 120 days for the stitched and the kind. This guarantees its full and unmistakable flavour enriched by aromas that stick to the simplest local tradition. This salami maintains all its qualities until it reaches the table. The visit includes a visit to the cellar where you can see all the products, taste them with bread and wine and have an explanation of how they are processed and prepared. During the week they do the processing, so a trip is possible only on Saturdays or Sundays.
