Trento DOC is an appellation for white and rosé sparkling wines made in the province of Trento.
The production of classic method sparkling wine in Trentino is more than secular. In the last hundred years, sparkling wine production has progressed continuously in terms of the number of producers and of bottles obtained. Trento DOC was the first Italian denomination to be reserved exclusively for sparkling wine obtained with refermentation in the bottle.
The harvest of the grapes destined for the production of Trento DOC sparkling wine usually takes place earlier than the grapes destined for the production of still wines to ensure the right balance between sugars and acidity necessary to obtain a quality sparkling wine.
The vinification of the grapes occurs mainly in purity with, if necessary, subsequent assembly of the various components in the phase of the constitution of the batch (cuvèe).
In the elaboration of the Trento DOC sparkling wine, only the “classic method” of refermentation in the bottle is allowed, including the shaking (remuage) and disgorging (dégorgement) operations. The elaboration process foresees a minimum period of stay on the yeasts lasting 15 months, raised to 36 months for the “reserve” type.
The delimited area for the production of Trento DOC wine includes territories of the province of Trento located in the Valle dell’Adige, the Valle di Cembra, the Vallagarina, the Valle del Sarca, the Valsugana and the Giudicarie valleys, practically affecting the same territory as the Trentino DOC.
The production area of Trento DOC affects a vineyard area of about 800 hectares within this territory. The vineyards used for the production of Trento DOC wine, mainly located on a slope, extend up to 800 m a.s.l.

The altitude of the vineyard influences the ripening process of the grapes, which gives the wines their distinctive taste.
The Trentino climate is characterized by a vast temperature range fully reflected in the organoleptic characteristics of the Trento DOC. The geo-climatic conditions produce the thermal shock typical of the Alpine environment, which is particularly important for transferring the quality and variety of aromas to the classic method Trento DOC, as well as making it particularly intriguing.
Trento DOC is produced using the vine varieties locally most suitable for sparkling wine with the method of refermentation in the bottle: Chardonnay, Pinot Bianco, Pinot Nero and Pinot Meunier.
Trento DOC is delicious in combination with fried fish, shellfish and white meats and is often combined in the Trentino tradition with aged cow cheeses. It’s a must-try with toasted bread; it also goes well with appetizers of cured meats, cheeses or savoury pastries.
Because of their mountain terroir, Trento DOC wines have a zippy acidity, a fresh and lively bouquet, and a persistent finish.
Trento DOC wines are distinguished by their straw-yellow colour, their delicate and rich bouquet and their dry, smooth and elegant flavour.
