Presentation

Acquerello is a unique rice, a symbol of culinary excellence and Italian quality produced at Tenuta Colombara, in the heart of the Vercelli rice fields.


 Thanks to a patented process, it is the only white rice in the world enriched with its germ—the most nutritious part of the grain—granting it the valuable nutritional properties of wholegrain rice.
The paddy rice is aged for at least one year in temperature-controlled silos, a method that stabilizes the starch, ensuring better cooking performance and a richer flavor. For the most exclusive versions, the aging process extends to eight years, giving the grains an exceptional ability to absorb flavors.
The whitening process is carried out gently and preserve the rice’s integrity.

Available in over 68 countries, it is cherished by top chefs and culinary enthusiasts worldwide.
Working with Piero Rondolino, the owner, in the company are his wife Maria Nava and their sons Rinaldo, Umberto and Anna. Apart from the Rondolino family, 26 employees passionately participate to the Acquerello project.


Tenuta Colombara, with a history dating back to the 1500s, is also home to the Conservatory of Rice Cultivation, a place that celebrates the cultural heritage of the rice fields.
