The DOC Cerveteri refers to four types of white wine (“Cerveteri bianco”, “Cerveteri bianco amabile”, “Cerveteri sparkling white” and “Cerveteri Trebbiano or Procanico”), to two types of red wine (“Cerveteri rosso” and ” Red Cerveteri amabile “) and two types of rosé wine (” Cerveteri rosato “and” Cerveteri rosé sparkling “).
This appellation’s origin dates back to ancient history: it is believed that the Etruscans would use supports to hold the vine up during cultivation, a practice still used in many regions of central Italy.
The production area of these wine extends along the Tirrenico coast and into the provinces of Rome and Viterbo close to the remains of the splendid ancient Etruscan settlements.
As well as Cerveteri we are talking Ladispoli, Santa Marinella, Civitavecchia and Tolfa, along with Tarquinia.
The red wines are blends of 60% Sangiovese and Montepulciano, 25% Cesanese and up to 30% of Canaiolo, Carignan and Barbera. The grapes are limited to a harvest yield of 15 tonnes/ha and the final wine must have a minimum alcohol level of 11%.
The white wines are composed of a minimum blend of 50% Trebbiano Romagnolo and Giallo, a maximum of 35% Malvasia di Candia and a maximum of 15% Friulano, Verdicchio, Bellone and Bombino bianco. The grapes are limited to a harvest yield of 14 tonnes/ha and the final wine must have a minimum alcohol level of 12%.
This pairs well with roasted fish and fried vegetables such as aubergines, artichokes and zucchini.
