Prugna di Modena | Cocktail

Aceto Balsamico Tradizionale di Modena is obtained exclusively from the cooked must of native Modena grapes (Ancellotta, Berzemino, Lambrusco, Occhio di Gatta, Sauvignon, Trebbiano, Sgavetta, as well as other DOC and DOCG), without any other substance. Its birth takes place during a slow evolution, between 12 and 25 years, inside barrels of different sizes arranged in descending order.

The following recipe will allow you to discover how to incorporate the traditional balsamic vinegar of Modena DOP inside a delicious cocktail.

Ingredients

  • 0.5 oz lemon juice
  • 0.5 oz of simple syrup
  • 1 plum cut in 4
  • 0.25 oz Aceto Balsamico Tradizionale Di Modena DOP
  • 4 oz black grape juice
  • 3 oz of Venturini Baldini sparkling wine

Instructions

  1. In a shaker, put the lemon juice, the simple syrup and the pieces of plum.
  2. Using a pestle, crush lightly.
  3. Add the egg white and black grape juice.
  4. Make a “dry shake”, that is to say, shake without ice cubes to give a nice emulsion to the cocktail, for 8 to 10 seconds.
  5. Add ice and shake vigorously for 8-10 seconds.
  6. Using a colander, strain into a cup-style glass.
  7. Top the cocktail with Venturini Baldini sparkling wine.
  8. Stir with a spoon to make the mixture more homogeneous.
