Stracchino

Stracchino is an Italian cow’s-milk cheese, typical of northern mountainous Italian regions, especially Liguria.

Presentation

Stracchino is square in shape and has no rind. It is eaten at very young stage, and has a very soft, creamy texture, with a mild and delicate flavour.

Stracchino is usually eaten on its own but is also used as a filling for bread: such as the Ligurian, focaccia col formaggio or used as a common filling for cascione which is made out of a thin flat bread.
