Sip & Savor is Coming to RASPIPAV: Meet Us in Montréal & Québec City

This fall, Sip and Savor: Pairing European Wines and Deli Meats returns to Québec for one of the season’s most anticipated stops: RASPIPAV. Promoted by the Consorzio Tutela Roero and the Istituto Valorizzazione Salumi Italiani (IVSI), and co-funded by the European Union, the project invites wine and food lovers to discover Roero DOCG wines alongside a selection of Europe’s finest protected-origin salumi.

 

Two Cities, Two Unmissable Dates

The Sip & Savor booth will welcome visitors in Montréal on October 17–18, 2026, before heading to Québec City on October 24–25, 2026. At each stop, the team will be on hand to guide tastings, answer questions, and share the stories behind the Roero appellation and the salumi on offer.

What's waiting at the Booth

Step up to the Sip & Savor booth and you’ll find a full tasting experience built around the dialogue between European wine and European charcuterie. Five DOP and IGP deli meats — Mortadella di Bologna IGP, Bresaola della Valtellina IGP, Prosciutto di San Daniele DOP, Lardo di Colonnata IGP and Finocchiona IGP, alongside Prosciutto Cotto — are sliced to order by hand and laid out on wooden boards, so every taste is as fresh as if it had just come off the block. Each one has its own personality: the delicate sweetness of Mortadella di Bologna IGP, the lean, silky depth of Bresaola della Valtellina IGP, the quiet richness of aged San Daniele DOP, the melt-in-the-mouth softness of Lardo di Colonnata IGP, and the warm, fennel-spiced character of Finocchiona IGP.

Alongside them, Roero DOCG wines are poured to match: the freshness and minerality of Roero Arneis DOCG brings out the lighter, more delicate cuts, while the structure of Roero Rosso DOCG stands up beautifully to the deeper, more aged products. It’s a hands-on way to taste how terroir and craftsmanship meet on both sides of the pairing — and to understand, glass in hand and taleggio in fingers, why these products carry DOP and PGI status in the first place.

Why RASPIPAV Matters

RASPIPAV, one of the province’s most beloved wine fairs, attracts thousands of consumers and professionals seeking new labels, direct interaction with producers, and educational opportunities.

SIP & SAVOR drew a steady stream of visitors, from casual enthusiasts to seasoned connoisseurs. The opportunity to taste Roero DOCG wines—featuring their main expressions, Roero Arneis and Roero Rosso—allowed many attendees to discover for the first time the distinctive qualities of this Piedmontese terroir: elegance, aromatic finesse, minerality, and a structure capable of delighting even the most discerning palates.

Complementing the wines, a selection of Italian deli meats completed the experience. These products, emblematic of European gastronomic tradition, convey history and craftsmanship through their aromas, flavors, and centuries-old production techniques. Public interest was immediate, with numerous questions on origin, production methods, and pairing possibilities—an unmistakable sign of growing curiosity for Europe’s culinary heritage.

Thanks to the presence of Roero producers and the excellence showcased by IVSI, attendees experienced firsthand how values such as authenticity, craftsmanship, and quality remain at the heart of Italian gastronomy.
